Ingredients
- Cake:
- 1 1/2 cups baby carrots
- 1 cup vegetable oil
- 1 1/3 cups sugar
- 3 eggs
- 1 1/3 cups plain flour
- 1 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 rounded tsp. cinnamon
- 1 tsp. vanilla extract
- Frosing:
- 8 ounces cream cheese (softened)
- 2 tbsp. butter
- 3 cups powdered sguar
- 1 tsp. vanilla extract
- 1/4 tsp. salt

Preparation
Step 1
Cake:
1. Preheat oven to 350 degrees. Place carrots in Master Prep Pitcher. Pulse 10 seconds till carrots are grated into tiny pieces. Remove carrots and set aside.
2. Place vegetable oil, sugar and eggs in Master Prep Pitcher. Pulse 10 second until combined and frothy.
3. Add flour, baking soda, salt, cinnamon and vanilla to sugar mixture and pulse 10 second until well combined and free of lumps.
4. Remove blades and stir in grated carrots with long spoon. Pour finished batter into two greased and floured 8 inch pans. Bake for 30 minutes or until a toothpick comes out clean.
5. Let cool at least 1 hour. Frost with Cream Cheese Frosting.
Frosting:
1. Place all frosting ingredients in Master Prep Pitcher and pulse in 5 second bursts for about 2 minutes.
2. Refrigerate for 2 hours to firm before frosting you cake. Refrigerate cake after frosting.
