Gingersnaps with fresh ginger

Ingredients
- 3 Tbsp butter, softened
- 1/3 cup molasses
- 1 Tbsp grated fresh ginger
- 2 Tbsp finely chopped crystalized ginger
- 1 cup + 2 Tbsp AP flour
- 1/8 tsp baking soda
- 1/4 tsp salt
- 1 tsp water

Preparation
Step 1
1. Preheat oven to 350F. Coat a baking sheet with cooking spray or non stick sheet.
2. Place butter, molasses and gingers in a mixing bowl and beat until well blended. Reduce mixer speed to low and add remaining ingredients, blending until a soft dough forms.
3. Roll dough in to 1/2 inch balls and place 1 1/2 inches apart on baking sheet. Flatten with a floured bottom of a glass. Bake 8-9 mins. Remove to a rack to cool. Store in a paper bag or plastic dish with a lid.
