MINESTRONE WITH SICILIAN SEASONING

This is another soup recipe with Sicilian Seasoning. I just can’t help myself. I love Sicilian so much. It’s my favorite. And Minestrone was practically invented for this blend. The veggies and the seasoned broth with the beans and a little bit of ground beef in the broth…really it’s just the perfect recipe to show off what the Sicilian can do

Ingredients
- 4 Slices Bacon
- 1 Large Onion chopped
- 4 cloves garlic chopped fine
- 1/2 lb. Ground Beef
- 4 Medium Carrots – diced
- 16 oz Tomato Sauce
- 28 oz can diced tomatoes
- 4 Cups Beef Broth
- 6 Cups Water
- 1/3 Cup Red Wine
- 4 Tbs. Sicilian
- 3 Medium Zucchini diced
- 2 Cups Fresh Spinach Chopped
- 1 Cup Pasta
- 15 oz can Garbanzo Beans
- 15 oz can Cannellini Beans
- Garnish: chopped parsley and grated Parmesan

Preparation
Step 1
In a stock pot, cook bacon for 5 minutes, add onion, garlic, and beef. Cook until beef is just done – about 10 minutes. Add carrots, tomato sauce, diced tomatoes, broth, water, wine, Sicilian Seasoning and bring to a simmer. Simmer for 30 minutes. Add zucchini, spinach, pasta, beans and more water if desired. Simmer for 15 more minutes or until pasta is just done. Serve hot topped with garnishes.
