Ingredients

  • 2 large onions, chopped
  • 1/4 cup chopped parsley
  • 1 teaspoon salt
  • Pepper
  • 1 cup water
  • 1 pound raw shrimp, cleaned
  • 1 cup tomato sauce
  • 1 1/2 cups water
  • 1 bay leaf
  • 1 cup long grain rice

Preparation

Step 1

In covered saucepan, cook chopped onions and seasonings in 1 cup water until soft. Remove cover and continue cooking over moderate heat until liquid is absorbed. Increase heat; add shrimp and stir quickly for 2 minutes. Add tomato sauce, water, and bay leaf; simmer for 15 minutes. Remove bay leaf. Bring to a boil and add rice. Cover and simmer 10 minutes, or until rice is tender and liquid is absorbed.

Serve with boiled greens or broccoli, which have been seasoned with salt, pepper, and lemon juice.
