Ingredients
- 4 scallions
- 1 clove garlic, minced
- 2 TBL olive oil, divided
- 1 can black beans, drained & rinsed (15oz)
- 1 TBL each lime juice & dill pickle juice
- 2 tap prepared yellow mustard
- 3/4 C quartered & sliced dill pickles
- 1/2 C small-diced swiss cheese
- S & P to taste

Preparation
Step 1
SLICE scallions, separating the white & green parts.
Sweat the white parts w/ garlic in 1 TBL oil in saute pan over med-low heat
Stir in beans
Cook to heat through
WHISK together lime juice, pickle juice, remaining 1 TBL oil & mustard
stir into bean mixture
off heat, stir in pickles, cheese & scallion greens
season w/ S&P
