Ingredients

  • 1 onion, diced
  • 1 t. garlic, minced
  • 2 T. butter
  • 2 green peppers, diced
  • 5 stalks celery, diced
  • 3 T. Cajun seasoning
  • 14-oz. pkg. Kielbasa sausage, sliced
  • 15-oz. can kidney beans, drained and rinsed
  • 14-oz. can diced tomatoes
  • 12-oz. can tomato juice
  • hot pepper sauce to taste
  • 3 c. cooked rice

Preparation

Step 1

In a skillet over medium heat, sauté onion and garlic in butter until onion is crisp-tender. Add green peppers, celery and seasoning; continue to cook until all vegetables are tender. Add sausage; sauté an additional 3 to 4 minutes. Add beans, undrained tomatoes and tomato juice; cook until heated through. Sprinkle with hot sauce to taste. Serve over rice.

Makes 6 servings.
