- 1/4 c. butter
- 1 c. sliced fresh mushrooms
- 1/4 c. chopped onion
- 1/4 c. chopped celery
- q/4 c. chopped green pepper
- 1 clove garlic, minced
- 3 c.cooked wild rice
- 1/2 c. slivered almonds, toasted
- 1/2 c. Cheddar cheese
Preheat oven to 325.
In a medium saucepan, melt the butter. Add the mushrooms, onion, celery, green pepper and garlic.
Cook until the vegetables are tender, about 5 minutes.
In a 2 qt. casserole, combine the vegetable mixture, cooked rice, almonds, cheese and pepper.
Cover and bake for 40-45 minutes.
