Ingredients
- 4 TB flour
- Salt & pepper
- 4 boneless, skinless chicken breasts, pounded thin
- Extra virgin olive oil
- 1 TB butter
- 1 (8-10 oz.) pkg. sliced mushrooms
- 1 large shallot, finely chopped
- 1 cup red wine
- 1/2 cup low-sodium chicken broth
- 2 tsp. chopped fresh thyme, OR 1 tsp. dried

Preparation
Step 1
Put flour in a shallow bowl. Season chicken with salt & pepper. Coat chicken in flour, shaking off excess. In a large heavy skillet, heat olive oil over medium-high heat. Add chicken & cook 5 minutes, turning once. Transfer to a plate. Add butter, mushrooms, & shallots to the pan & cook until soft, about 5 minutes. Add wine & chicken broth & simmer until reduced by 1/3, about 5 minutes. Return the chicken to the pan, add the thyme, & simmer 5 minutes.
