Hot Curried Pork

Ingredients
- 2 tbsp cooking oil
- 2 cloves garlic, minced
- 1 tbsp fresh ginger root, minced
- 2 tbsp curry powder
- Hot pepper flakes to taste
- 1/4 tsp cayenne pepper
- 1 tsp salt
- 4 sm cooking onions, diced
- 1/2 lb pork roast or tenderloin, cut in 2" strips
- 3/4 c tomato juice
- 1 c raisins
- 1-1/2 c cubed, peeled apples

Preparation
Step 1
Heat oil in skillet and cook garlic and ginger root about 1 minute, stirring constantly. Add curry powder, hot pepper flakes, cayenne and salt.
Stir well for about 1 minute. Stir in onions and combine well.
Cook onions until tender. Add pork and mix well; add tomato juice and bring to a boil. Reduce heat and cook about 15 minutes, or until pork is cooked through. Add raisins and apples and cook another 5 minutes. Serve with basmati rice.
