- 1 tsp. kosher salt
- 1/4 small red onion (thinly sliced)
- 2 tbsp. olive oil
- 2 tbsp. white wine vinegar
- 1/2 tsp. kosher salt
- 1/4 tsp. black pepper

Step 1
In a colander, toss the zucchini with 1 tsp kosher salt. Let sit until softened, about 30 minutes. Rinse & pat dry. In a medium bowl, toss with remaining ingredients. Let sit at least 15 minutes and up to 8 hours before serving.
