Ingredients

  • DOUGH:
  • 1 Tbsp extra virgin olive oil
  • 1 tsp minced garlic
  • 2 whole wheat pizza crusts (see recipe below)
  • 1-1/2 cups shredded part-skim mozzarella
  • 1 lb. sliced tomatoes
  • 1/2 cup fresh basil leaves
  • 3/4 cup warm water
  • 1 pkg (1/4 oz) active dry yeast
  • 1/2 tsp. sugar
  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 1-1/2 tsp. extra virgin olive oil
  • 1 tsp. kosher salt

Preparation

Step 1

Pizza:

1. Prepare grill for medium high heat.
2. Mix olive oil and garlic together.
3. Unwrap pizza crusts and brush 1 side with half garlic oil.
4. Put crusts oil side down on grill and heat until bottoms are golden brown, about 2 minutes.
5. Flip crusts, brush with remaining oil and sprinkle with cheese evenly.
6. Grill until bottoms are golden brown, about 2 minutes longer. Remove to cutting board.
7. Scatter tomatoes and basil leaves evenly on pizzas.
Cut each pizza into 4 slices.

Dough:
1. Stir together water, yeast and sugar. Let stand until foamy, about 10 minutes.
2. Stir in flours, olive oil and salt. Knead dough on lightly floured surface until smooth, about 2 minutes. Put in lightly oiled bowl and cover loosely with plastic wrap. Let dough rise until doubled in size, about 1 hour.
3. Form dough into 4 balls.
4. Roll out dough ball on lightly floured surface until 1/8" thick (about 10" in diameter). Transfer to baking sheet lined with plastic wrap and cover tightly with another sheet of plastic. Repeat with remaining dough.
5. Freeze dough until firm (10 minutes) or ready to use.
