Chowder: New England Clam for Halloween

Every year on Halloween I make this chowder, and I serve it with a snake sandwhich that is delicious. This is a tradition in my home and one we all love.

Ingredients

  • 1/4 pound diced bacon
  • 1 cup diced onion
  • 5 6 ounce cans of clams, reserve the juice
  • 3 medium potatoes, cubed
  • 3 cups light cream (half and half)
  • 1/4 cup butter
  • salt and pepper

Preparation

Step 1

In a saucepan cook bacon until crispy, render fat by pouring off all but 2 tablespoons: add onion and cook until golden. Drain cans of clams. Add juice to onions with potatoes. Bring onion and potato mixture to a boil: cook until potatoes are tender, about 10 minutes. Add chopped clams, cream, butter and reserved cracklings from bacon and seasonings. Heat but do not boil.
