Forbidden Black Rice Pudding

Using coconut milk and fresh banana, this forbidden rice pudding is slightly sweet with a tropical flair.

Ingredients
- Makes 2 cups
- Pudding
- 1 1/2 cups cooked forbidden rice
- 1 cup coconut milk, or any other milk
- 1/4 cup unsweetened coconut, shredded
- Pinch of salt
- 2 tsp finely chopped ginger
- 5 dates, pitted and chopped (cut with scissors)
- Topping (optional)
- Sliced bananas

Preparation
Step 1
In a medium saucepan combine all the ingredients, except the bananas. Bring to a simmer.
Cook on low for about 10 minutes. Stir occasionally until creamy and thick.
Serve warm or let cool and serve cold. Top with banana slices or more shredded coconut if you like.
