Ingredients
- 1 c. cooked elbow macaroni
- 1 medium tomato (diced)
- 1/2 medium green pepper (diced)
- 1/2 small onion (diced)
- 1 T butter
- 1 T flour
- 1 1/4 c. milk
- 8 oz. Colby Jack cheese
- Black pepper to taste

Preparation
Step 1
Add cooked macaroni to tomato and green pepper. Reserve. Preheat oven to 350 degrees. In saucepan, saute' onion in butter until transparent. Add flour and black pepper. Add milk. Cook until slightly thickened and bubbly. Add cheese and stir until melted. Add macaroni/vegetable mixture and coat evenly. Transfer to pie plate and bake for 25-30 minutes or until bubbly. Cool before serving.
