Nutless Thumbprint Cookies
- 2 cups sifted all purpose flour
- 1/2 tsp. salt
- 1 cup butter
- 1/2 cup superfine sugar
- 2 tsp. vanilla extract - or - 1 1/2 tsp vanilla & 1/2 tsp. almond extract
- 1/2 cup sifted confectioners sugar
- Jam of your choice
Preheat oven to 325
Sift together flour & salt - set aside
Cream butter and sugar until light and fluffy (about 2-3 minutes)
Chill dough 1 - 2 hours.
Shape dough into 1" balls and space them 2 inches apart on ungreased cookie sheets.
Make a deep thumbprint in the center of each, Fill with preferred jam or chocolate.
Bake for 15 minutes or until cookies are the color of pale sand.
Transfer to wire racks and cool.
When cookies are cooled dust with powdered sugar.
