Ingredients
- 1/2 cup almond meal
- 2 tbsp coconut flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup coconut milk
- 1/4 cup walnuts, chopped
- 2 tbsp coconut oil
- 1 cup shredded carrots
- 3 eggs
- 1/4 cup raisins
- Coconut flakes
- Pure maple syrup
- Chopped walnuts

Preparation
Step 1
In a medium bowl combine almond meal, coconut flour, baking soda, salt, cinnamon and nutmeg
In a separate bowl combine coconut milk, walnuts, coconut oil, carrots, eggs and raisins
Add wet ingredients to dry ingredients and mix well.
Grease a pan with some oil. Pour batter on skillet (approximately 10 small pancakes) over low heat and brown both sides
