Ingredients
- 1 cup milk
- 1 cup all-purpose flour
- 1 tbsp. Melted butter
- 1 Tsp. Sea salt
- 2 eggs
- generous pinch freshly ground black pepper -Optional
- 2 oz. Gruyère cheese, grated -Optional
- butter, duck fat or olive oil for pans

Preparation
Step 1
*Place* a 6-cup popover pan in the bottom third of an oven with a baking sheet on the rack underneath to catch any drips. *Preheat* the oven to 425ºF.
*Combine* flour, milk, eggs, salt, pepper (if using) and melted butter in a large measuring cup and whisk or blend until smooth. *Set* aside at room temperature to rest for about one hour.
*Remove* the popover pan from the oven and add 1/2tsp. fat of choice to each of the cups. *Return* to the oven for a couple of minutes to melt/heat the fat. *Fill* the prepared cups about half full with batter and sprinkle each with 1/2 oz. cheese, if using.
*Return* the pan to the oven and bake until the popovers are browned and puffed, 30 minutes.
Invert the pan and remove the popovers. Serve immediately. Using a paper towel, wipe out the excess fat from the popover cups. Heat the pan in the oven for 5 to 10 minutes. Repeat to bake the remaining batter. Makes 12 popovers.
