- 1 10 oz. jar maraschino Cherries
- 1 3/4 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2/3 cup brown sugar
- 2 eggs
- 1/3 cup butter, softened
- 1 cup mashed ripe bananas
- 1/2 cup chopped walnuts or macadamia nuts
Drain maraschino cherries, reserving 2 tbs juice. Cut cherries into quarters; set aside.
Combine flour, baking powder and salt in small bowl; set aside.
In medium bowl, combine brown sugar, eggs, butter and reserved cherry juice; mix at medium speed of electric mixture until ingredients are thoroughly combined. Add flour mixture alternately with mashed bananas, beginning and ending with flour mixture. Stir in cherries and nuts. Lightly spray 9 x 5 x 3 inch loaf pan with nonstick cooking spray. Spread batter evenly in pan.
Bake in preheated 350 degree oven 1 hour or until golden brown and wooden pick inserted near center comes out clean. Remove from pan and cool on wire rack. Store in tightly covered container or wrapped in foil.
