  • 1 1/2 cups cornmeal
  • 1 cup flour
  • 1 tea. baking soda
  • 1/2 tea. salt
  • 3 Tbsp. sugar
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 cup buttermilk
  • 4 oz. smoked cheese

Preparation

Step 1

Preheat grill to medium. Lightly grease a small cast iron skillet.

Whisk together first 5 ingredients; then add oil, eggs, and buttermilk; use spatula to mix until just combined. Ladle batter evenly into pan. Crumble cheese on top, and let rest for 15 minutes; then bake in grill over indirect heat for 30-35 minutes.

Check doneness with toothpick inserted in center. Remove, and cool for a few minutes. Run a knife around the edge; place cooling rack on top of skillet or pan and flip. Cool for 30 minutes be3fore slicing.
