Ingredients

  • 4 Tbsp Olive Oil
  • 1/3 – 1/2 lb. pancetta
  • 1 lb. each: ground pork; veal & beef
  • 1 carrot finely diced
  • 1 stalk celery finely diced
  • 1 onion finely diced
  • 6 cloves garlic finely diced
  • Salt & Pepper to taste.
  • Pinch of fresh nutmeg.
  • 1 can tomato paste
  • 2-3 cans of red wine
  • 2-3 cans of chicken or beef broth
  • 3/4 cup milk

Preparation

Step 1

Sauté pancetta until crisp, remove & reserve for later

Add the pork, veal & beef

Brown meet completely. Add pancetta after meat is browned.

Add the finely diced carrot, celery, onion and garlic. Salt & Pepper to taste. Add pinch of fresh nutmeg.

Add: 1 can tomato paste
2-3 cans of red wine (use the tomato paste can to measure)
2-3 cans of chicken or beef broth
Simmer 25-30 mins. stir occasionally

Add: ½ cup milk, stir & simmer 5-10 mins.
¼ cup milk, stir & simmer 5-10 mins.

Add more wine or broth if you like. Simmer/stirring until carrots & celery are tender.

At very end, add bit of cream and simmer 5 more minutes.
