Ingredients
- Base Layer:
- 1/3 cup confectioners' sugar
- 2 cups plain flour
- 2 sticks softened butter
- Second Layer:
- 1/3 cup lemon juice
- 1 tbsp. lemon peel
- 2 cups sugar
- 3 eggs
- 4 tbsp. self-rising flour
- Confectioners' sugar for dusting.

Preparation
Step 1
Base Layer:
Cream all base layer ingredients together and pat out thinly in 13 x 9 inch pan.
Bake at 350 degrees for 25-30 minutes
Second Layer:
Beat all ingredients together and pour over cooked base layer. Cook about 25 minutes at 350 degrees. Let cool. Dust with confectioners' sugar. cut into squares.
