Red Cabbage

My husband loves this dish, especially with steak. I love it with a big teaspoon of goat cheese on top.

Ingredients
- 1 medium head red cabbage
- 1 medium onion
- 2 large cooking apples
- 1 tablespoon bacon fat or butter
- 1 1/2 cups water
- 1 cup cider vinegar
- 1/2 cup sugar
- 1 teaspoon salt
- 1 bay leaf
- 2 whole allspice
- 6 peppercorns
- 1 tablespoons cornstarch
- 2 tablespoons cold water

Step 1
Wash cabbage and remove outer leaves; cut into quarters. Remove core and slice. Slice onion. Pare apples and cut into sixths, removing core. Toss cabbage, onion and applese together in a Dutch oven. Add water, cider vinegar, sugar, salt and spices. Simmer uncovered, 1 to 1 1/2 hours. Combine cornstarch and cold water. Stir into hot cabbage; cook and stirr until thickened, about 1 minute.
