Eggless Chocolate Cake

Ingredients
- 2 ounces unsweetened chocolate
- 1 c milk
- 1 3/4 c cake flour
- 3/4 tsp baking soda
- 3/4 tsp salt
- 1 c sugar
- 1/3 c shortening (or butter)
- 1 tsp vanilla extract

Step 1
Preheat oven to 375 degrees.
Combine chocolate and milk in top of double boiler and cook over rapidly boiling water 5 minutes, stirring occasionally. Blend with rotary egg beater; cool.
Sift flour once, measure, add soda, salt, and sugar, and sift together three times. Cream shortening; add flour, vanilla, and chocolate mixture and stir until all flour is dampened. Then beat vigorously 1 minute.
Bake in 2 buttered and lightly floured 8-inch layer pans 20-25 minutes, or until sharp knife inserted in cake comes out clean.
Cool in pans 5 minutes, then on rack; but be careful handling the layers--they are fragile! Spread with Cocoa mile-a-minute frosting.
