Salt and pepper
cloves garlic, minced
TB chopped fresh parsley, thyme, rosemary & basil mixed
cups panko bread crumbs OR 2 sleeves Ritz crackers, crushed
Season chicken with salt & pepper. Place in a 9 x 13 casserole dish in a single layer. In a small bowl, whisk buttermilk, garlic & herbs. Pour over chicken, turning to coat. Marinate 30 minutes. Preheat oven to 425°F. Line a large baking sheet with foil. Place a wire rack on baking sheet & coat with cooking spray. In a shallow bowl, combine panko/Ritz, paprika, 1/2 tsp. salt and 1/4 tsp. pepper. Dredge chicken in panko/Ritz mixture, shaking off excess. Arrange on rack. Drizzle with oil. Bake until golden brown & cooked through, 40 to 50 minutes.
