Ingredients

  • 1-1/2 c cashews
  • 1/4 c regular rolled oats
  • 6 Medjool dates, pitted an chopped
  • 2 T maple syrup
  • 1 T instant espresso powder
  • 1/4 t sea salt
  • 1/2 c chopped toasted walnuts
  • 1/3 c chopped bittersweet chocolate

Preparation

Step 1

In a food processor, process cashews and oats about 30 seconds or until chopped. Add dates, syrup, powder and salt, process 30 seconds or until mixture resembles cookie dough. Add walnuts and chocolate and process for 20 seconds or until combined.
Line 8" square pan pan with parchment, extending over 2 sides. Place oat mixture in it and top with another parchment. Press evenly into pan. Remove top parchment. Cover with plastic and frezze for 4 hours. Lift out of pan using parchment.
