Chocolate Peppermint Bars

Ingredients
- 1 cup (2 sticks) butter, melted
- 4 (1-ounce) squares semisweet chocolate, melted
- 4 large eggs
- 2 cups granulated sugar
- 1 cup all-purpose flour
- 2 1/2 cups confectioners' sugar
- 15 tablespoons butter, softened, divided
- 1 1/2 tablespoons whipping cream
- 1 teaspoon peppermint extract
- 12 ounces semisweet chocolate chips

Step 1
Preheat the oven to 350°F. Grease and flour a 15 × 11-inch jelly roll pan.
Combine melted butter and melted chocolate in a large bowl. Beat with an electric mixer set at medium-high speed until blended.
Beat in eggs one at a time. Add granulated sugar and flour and mix well. Spread in prepared jelly roll pan. Bake for 20 to 25 minutes or until the layer pulls from the sides of the pan. Let stand to cool completely.
Beat confectioners' sugar, 7 tablespoons of the softened butter, whipping cream and peppermint extract in a large bowl until mixture is smooth. Spread over cooled brownie layer. Chill, covered, for 30 minutes.
Combine chocolate chips and remaining softened butter in a small saucepan. Cook over medium heat until chocolate chips are melted. Spread over chilled peppermint layer. Let stand to cool. Cut into bars.
