Ingredients
- 1 - 2 lb. Whole Red Snapper, Striped Bass or Dorade
- garlic clove
- slice of lemon
- fresh herbs
- Basil Oil or EVOO

Preparation
Step 1
Remove gills, guts & scales and wash in cold water.
Rub inside & out w/kosher salt & crushed black pepper.
Jam a clove of garlic & slice of lemon & fresh herbs into the cavity.
Place on lightly oiled pan or foil and put into a very hot oven. 500
Roast until crispy & cooked through.
Drizzle a little basil oil over plate.
Garnish w/parsley or basil.
