Oh this is sooo good. I especially love the catsup all over the top. It's moist and delicious and makes the very best meatloaf sandwhich. I would even turn these into meatballs because the meat is so good. If you use 5 pounds of ground chuck I would definetly break it up into two loafs and freeze one. One huge loaf will easily serve 4 and two loaves will easily serve 8.

Ingredients

  • 5 pounds of even portions of ground veal, pork and chuck
  • 1 large chopped onion
  • 1 tablespoon of minced fresh thyme
  • 3/4 cup chicken broth
  • 1/3 cup worcester sauce
  • 1 tablespoon tomato paste
  • kosher salt and pepper to season
  • 3 eggs beaten
  • 1 1/2 cups bread crumbs

Step 1

Preheat oven 325*

Saute onions in a couple of tablespoons of olive oil with thyme and salt and pepper until onions are translucent. It takes about 15 minutes.

Meanwhile place ground meat in large bowl and add eggs and bread crumbs. Lightly mix them together.

In Sauted onions add worcestere sauce and tomato paste and chicken stock. Remove from heat and let cool before adding to ground meat.

Mix the sauce with the meat mixture lightly until well incorporated making sure not to smash meat. Mold into a large loaf and place on a prepared cookie sheet. Drizzle the top of the loaf with catsup until fully covered. Bake for 1 and 1/2 hours until fully cooked.
