Ingredients

  • 4 large eggs
  • 1/4 cup water
  • 4 ounces of cooked ham, cut into thin strips
  • 1 cup sliced mushrooms
  • 1/2 cup chopped tomato
  • 1/4 cup sliced scallions
  • 1/4 cup chopped green bell pepper
  • freshly ground black pepper, to taste

Preparation

Step 1

Preheat oven to 375ºF. Lightly spray a 10-inch glass pie pan with non-stick cooking spray. In a medium bowl with wire whisk, beat eggs and water until well blended. Stir in remaining ingredients. With a spatula, scrape into prepared pan. Bake 20 to 30 minutes until omelet is set, slightly puffed and browned.
Serves 4.
