- 24 ounces orecchiette pasta
- 18 ounces spicy Italian sausage
- 4 chile de arboles
- 2 teaspoons garlic, minced
- 4 teaspoons shallots, minced
- 2 cups roasted tomatoes, chopped
- 6 ounces broccolini, chopped
- 2 ounces butter
- 4 ounces Grana Padano cheese
- 4 ounces Pecorino cheese
- Oil, as needed
- Salt, to taste

Heat water to boil the pasta. Once boiling, cook the pasta according to package directions. Meanwhile, brown the sausage over medium heat, breaking it up as it cooks. Once the sausage is browned, add the shallot, garlic and chili and cook for a minute. Add the tomatoes and broccolini and cook until the broccolini is tender. Add the cooked pasta, butter, cheeses, and salt to taste.
