Ingredients

  • 3 egg yolks beaten
  • 1/3 cup sugar
  • 1/4 cup lime juice
  • 1 1/2 teaspoon grated lime rind
  • 1 1/2 cups heavy cream
  • green food coloring
  • 9 " graham cracker crust

Preparation

Step 1

In the top of a double boiler, mix egg yolks, sugar and lime juice. Cook over boiling water stirring until thickened. Add grated rind. Chill until thickened but not firm. Whip 1 cup cream and fold into mixture. Add a few drops of green food coloring.

Pile into shell, and chill 24 hours. Top with 1/2 cup cream, whipped.
