Ingredients
- 1 1/2 cup(s) (chopped) lettuce Bibb variety
- 1 small fresh apple(s) thinly sliced or chopped
- 1 item(s) whole hard boiled egg(s) sliced
- 1/2 cup(s) canned chickpeas (undrained) rinsed and drained
- 1/2 cup(s) shredded carrot(s)
- 1/4 cup(s) roasted red peppers (packed in water) thinly sliced
- 2 tsp vinegar
- 1 tsp olive oil

Preparation
Step 1
Place lettuce on a plate and top with apple, egg, rinsed and drained chickpeas, carrot and peppers; toss with vinegar and oil and season to taste.
Swaps:
Try chopped skinless chicken breast; firm, cubed tofu; or canned tuna (packed in water) instead of or in addition to the eggs and chickpeas. Use fat-free salad dressing instead of oil and vinegar.

Fresh herbs, capers and/or lemon zest
