Ingredients
- 1 medium to large onion, chopped
- 1 TBLS. oil
- 2 cloves of garlic, chopped or 1 TBLS. minced garlic
- 1 can beef broth
- 1 quart canned tomatoes
- 2 quarts tomato juice
- half of a large head of cabbage cut into 1 inch chunks
- 2 cups thinly sliced carrots
- 2 cups frozen corn
Preparation
Step 1
Saute onion in the oil until tender but not brown.
Add all other ingredients and bring to a boil.
Cook until cabbage and carrots are tender.
