Ingredients

  • 1

    medium to large onion, chopped

  • 1

    TBLS. oil

  • 2

    cloves of garlic, chopped or 1 TBLS. minced garlic

  • 1

    can beef broth

  • 1

    quart canned tomatoes

  • 2

    quarts tomato juice

  • half of a large head of cabbage cut into 1 inch chunks

  • 2

    cups thinly sliced carrots

  • 2

    cups frozen corn

Directions

Saute onion in the oil until tender but not brown. Add all other ingredients and bring to a boil. Cook until cabbage and carrots are tender.
