Preparation
Step 1
Mix together 2 1/2 cups sugar and canned peaches with juice in a non-reactive (glass or ceramic) bowl or jar. Cover and stir daily with a wooden spoon. On the 10th day, add 2 1/2 cups sugar and pineapple with juice. Mix together, cover and stir daily with a wooden spoon for 10 more days.
We are up to 20 days. Now add 2 1/2 cups sugar and cherries, without juice. Mix together, cover and stir daily with a wooden spoon for the last 10 days. On the 30th day, separate fruit and juice.
Divide fruit and juice into thirds. Share the remaining 2/3 fruit and juice (and the recipes) with friends so they can make their own cakes and fruit starter.
Use 1/3 of the fruit (about 1 1/2 cups) to make Friendship Cake.
Use 1/3 of the juice (about 1 1/2 cups) for the next batch of starter you make. On the first day, mix together 1 1/2 cups reserved starter juice with the sugar and peaches. Follow the rest of the recipe as above.
If you are not using or shaaring them immediaitely, refrigerate the juice and fruit from the starter. Bring to room temperature before using them.
