Almond Strawberry Spinach Salad 1 Picture

Ingredients

  • Dressing:
  • 1 bunch fresh spinach, cleand and stems removed
  • 2 cups strawberries, stems removed and thinly sliced
  • 1 cup blueberries (optional)
  • 2/3 cup whole almond toasted and coarsely chopped (or sliced raw almonds)
  • 1 pear, peeled and thinly sliced
  • 1/4 cup red onion, thinly sliced (optional)
  • 3 Tbsp red wine vinegar
  • 3 Tbsp olive oil
  • 2 Tbsp maple syrup
  • 1/2 tsp sea salt
  • 2 Tbsp poppy seeds
  • 2 tsp Dijon mustard

Preparation

Step 1

Place the spinach, sliced strawberries, blueberries (if using), toasted almonds, sliced pear and red onion (if using) in a large bowl. Set aside.

For the dressing, place all ingredients in a jar and shake well. Pour over the assembled salad and gently toss just before serving.
