Ingredients
- Dressing:
- 1 bunch fresh spinach, cleand and stems removed
- 2 cups strawberries, stems removed and thinly sliced
- 1 cup blueberries (optional)
- 2/3 cup whole almond toasted and coarsely chopped (or sliced raw almonds)
- 1 pear, peeled and thinly sliced
- 1/4 cup red onion, thinly sliced (optional)
- 3 Tbsp red wine vinegar
- 3 Tbsp olive oil
- 2 Tbsp maple syrup
- 1/2 tsp sea salt
- 2 Tbsp poppy seeds
- 2 tsp Dijon mustard

Preparation
Step 1
Place the spinach, sliced strawberries, blueberries (if using), toasted almonds, sliced pear and red onion (if using) in a large bowl. Set aside.
For the dressing, place all ingredients in a jar and shake well. Pour over the assembled salad and gently toss just before serving.
