Ingredients
- Filling:
- Cookies
- 2/3 c. sour cream
- 1 egg
- 1 tsp. vanilla
- 1 tsp. white vinegar
- 2 c. flour
- 1 c. packed brown sugar
- 3 tablespoons cocoa
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 8 tablespoons butter, room temp.
- 1- 1oz. bottle of red food coloring
- 10 tablespoons butter, room temp.
- 1 c. powdered sugar
- 2 tablespoon light corn syrup
- 1 tsp. vanilla
- 2 pinches of salt
- 1 jar of marshmallow fluff
- 1-2 drops desired color food coloring or leave white

Preparation
Step 1
Cookies:
Whisk sour cream, egg, vanilla and vinegar together.
In a separate bowl, whisk together flour, brown sugar, cocoa, baking soda and salt. Add butter and mix until small pea sized pieces form. Stir in sour cream mixture and mix until moistened. Add food coloring and beat until well combined, scraping sides.
Using a regular or large cookie scoop, drop batter onto greased cookie sheet. Bake at 350 degrees until tops are cracked, 10 minutes. Transfer to a wire rack to cool. Repeat with remaining batter.
Filling:
Beat butter and sugar with electric mixer. Beat in corn syrup, vanilla and salt. Stir in fluff and food coloring. Beat on high until light. Refrigerate for 20 minutes.
Spread filling on flat side of cookie and sandwich with another. Repeat with remaining cookies and filling.
Optional: Drizzle top of cookies with white icing or powdered sugar for more of a statement.
