Ingredients
- 1 stick butter, softened
- 1/2 cup sugar
- 1 tsp. vanilla
- 1 egg, separated
- 1 1/4 cups sifted flour
- 2/3 cup chopped almonds
- Raspberry jam

Step 1
Beat butter, sugar, vanilla, and egg yolk until fluffy. Stir in flour. Gather dough into ball and chill several hours.
Roll teaspoonful of dough into balls. Dip into slightly beaten egg whites and roll in almonds. Place on ungreased cookie sheets 1 in apart. Press an indentation with finger in each cookie. Fill with jam. Bake at 300 for 20 min or until golden. Cool on wire racks.
