Preparation

Step 1

In a mixing bowl, combine sugar, milk or cream, butter and vanilla. Add in baking powder, salt and flour and mix well. Dough should be a stiff batter.
Make caramel sauce.

In a skillet (at least 10” diameter x 2” high) combine sugar, boiling water, butter, vanilla and salt. Bring mixture to a boil, stirring to dissolve sugar. Drop dough by spoonfuls randomly into boiling sugar mixture. For smaller dumplings, drop smaller spoonfuls of dough. Turn heat to medium low and continue to cook dumplings for about 20-25 minutes. (Covering the dumplings with a domed-shape lid that won’t touch the dumplings will allow them to cook faster) Once or twice during cooking process, spoon caramel sauce over dumplings. Do not burn bottom of pan.

GREAT TIP FOR CLEANING SKILLET:
Fill dirty skillet with water and place on stovetop. Squirt about 2 teaspoons of liquid dish detergent into water and mix. Bring water to a boil. Turn off heat and let skillet sit until sugar is dissolved.
