Braised Pork Shoulder with Arugula

Ingredients
- 3 lb. pork shoulder, cut into 3/4 inch cubes
- 3 inch piece of fresh ginger root, peeled and cut into thin slices.
- 10 garlic cloves
- 3/4 cup Marsala wine
- 3/4 cup sake
- 1/2 cup soy sauce
- 1/3 cup sugar
- 1 small package arugula
- 2 cups water

Step 1
Place pork cubes in a pot and cover with water. Bring to boil and let boil for 10 minutes. Strain and rinse pork, set aside.
In a clean pot, add pork, ginger, garlic, 2 cups water, Marsala, sake, soy sauce and sugar.
Bring to a simmer over medium heat- low. Simmer with a cover slightly, ajar. Stir occasionally and skimming off any foam on top. Cook on low for 1 ½ hours or until pork is soft.
Serve pork warm, top with arugula.
