Ingredients

  • 2 eggs
  • 1 Tbsp granulated sugar
  • 1/4 tsp lemon or vanilla extract
  • 1 tsp baking powder
  • 1/4 stick(2 Tbsp) butter or margarine
  • flour
  • cooking oil
  • confectioner's sugar

Preparation

Step 1

Combine first 4 items in a mixing bowl and whip for about 5 minutes.
Combine the butter in a separate bowl with 2 cups of flour or more if it will take it; working until smooth.
Add the first mixture and work together with the hands until you have formed a ball which will not stick to the bowl.
Pat ball on all sides and place in a pan. Cover and let stand 20-25 minutes.
Place on a lightly floured board and with a covered rolling pin roll out the dough in an extremely thin layer. Cut strips about 2" wide and 6" long with a cutting wheel. Join the ends to form rings.
Heat a large skillet with oil.
When very hot, fry the rings. When lightly browned on one side turn over to the other side. Line a cool pan with towel paper and drain the wandi and sprinkle with confectioner's sugar.
