Ingredients

  • 3 cups frozen hashbrowns
  • 3 tbsp melted butter
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 12 breakfast sausage
  • 6 eggs
  • 2 cups Tex Mex shredded cheese
  • 1/4 cupped chopped peppers
  • 1/4 cup chopped green onion

Preparation

Step 1

Thaw frozen hashbrowns. Add melted butter, salt and pepper. Press into bottom and sides of muffin tins. Bake at 400 for 12 minutes.

Cook sausage and drain fat. Dice into small pieces. Lay in bottom of cooked hashbrown bottoms.

Mix egg, cheese, peppers and green onion. Pour into muffins on top of hashbrowns and sausage.

Bake at 400 for 13-15 minutes.
