Ingredients

  • 4 slices whole wheat bread
  • 1 t. dried oregano
  • 1/2 t. garlic powder
  • 3 t. paprika
  • 1/2 t. salt
  • 1/2 t. black pepper
  • 2 egg whites
  • 1/2 C. Skim milk
  • 1/2 C. all purpose flour
  • 4 skinless, boneless, chicken breast halves
  • Olive oil cooking spray
  • 1 jar god quality marinara sauce
  • 3/4 C. shredded cheese

Preparation

Step 1

Preheat oven to 350 degrees.

Place the bread in the bowl of a food processor and process until fine crumbs are formed, about 20-30 seconds. Put the crumbs on a baking sheet and bake for 12 minutes, until golden.

In a medium bowl, toss the crumbs with the oregano, garlic powder, paprika, 1/4 t. salt, and 1/4 t. pepper.

In another bowl, whisk the egg whites and milk together.

In a third bowl, stir together the flour, and remaining 1/4 t. salt and pepper.

Dip each piece of chicken in the flour, then the egg, then the bread crumbs.

Increase oven temp to 400 degrees. Spray each chicken breast with olive oil and bake 15 minutes. Top each breast with marinara and shredded cheese and bake another 10 minutes.
