Ingredients
- Crust:
- 1 cup warm water
- 1 package active dry yeast
- 1 teaspoon sugar or honey
- 1 tablespoon olive or vegetable oil
- 1/4 teaspoon salt(optional)
- 1 1/2 cups whole wheat flour
- 1 to 1 1/2 cups all-purpose flour
- Topping:
- 3 cups zucchini strips
- 8 ounces part-skim Mozzarella cheese
- Pepper flakes(or may use chopped peppers, mushrooms, or any favorite vegetable).

Step 1
In large bowl, mix together water, yeast, and sugar or honey; stir well to dissolve yeast. Let stand for 5 to 15 minutes. Add oil, salt, whole wheat flour, and enough flour (about 1 cup) to form a ball of dough that pulls away from side of bowl. Knead 5 to 8 minutes, adding more flopur as needed to produce a firm, smooth ball that is not sticky. Place dough in greased bowl, turning to grease top. Cover bowl tightly, and set aside in warm place, allowing dough to rise until double in bulk, about 1 hour.
