Ingredients

  • 1/4 pound diced bacon
  • 1/4 pound zesty sausage
  • 2 tablespoons butter
  • 1 chopped onion,
  • 2 chopped celery stalks,
  • 1 large diced carrot
  • 2 diced jalapeno,
  • 1 tablespoon thyme
  • 3/4 teaspoon chili powder
  • 3 cups chicken broth
  • 2 eggs,
  • 1 cup diced pepper jack cheese
  • bowl 8 cups toasted white bread cubes
  • 6 cups crumbled cornbread

In a large deep skillet, saute bacon in butter for 5 minutes; transfer to paper towels. Saute sausage until brown approximately 5 minutes; transfer to paper towels.

Saute onion, celery , carrot, jalapeno, thyme and chili powder; cook 5 minutes. Season with salt and pepper.

Pour in chicken broth and simmer .

In a large bowl, mix eggs, diced pepper jack cheese sausage and bacon.

Add egg mixture to the bowl of toasted white bread cubes, crumbled cornbread add the hot broth mixture.

Gently toss the stuffing, then spread in a buttered 9-by-13-inch baking dish. Dot the top with butter or turkey pan drippings, cover and bake 30 minutes at 350. Uncover and bake until golden, 20 more minutes.
