BBQ Shrimp Scampi with Kale

- 2/3 Cup canola Oil
- 6 to 9 Tbsp Red Onion, small diced
- 1 to 2 Tbsp jalapeno pepper, seeded & minced
- 32 to 40 large shrimp, butterflied
- 1/2 cup white wine, Riesling
- 6 Tbsp buttery spread
- 6 Tbsp of ready made smoked barbeque sauce
- 1/2 to 1 cup tomatoes, diced
- 1 - 3 Tbsp kale
- Kosher salt
- Ground black pepper
- MARINADE
- 4 Tbsp olive oil
- 2 Tbsp minced garlic
- 1 1/2 Tbsp of finely chopped kale
- Kosher salt

Step 1
MARINADE
1. In a small bowl, add oil, garlic, kale and a pinch of salt and pepper.
2. Add shrimp and toss well.
SHRIMP
1. Marinade shrimp and set aside.
2. Bring a large saute pan to medium high heat. Add oil, red onion, jalapeno, and shrimp.
3. Saute until shrimp begin to plump up. Add white wine, buttery spread, and barbeque sauce.
4. Let shrimp simmer until sauce thickens. Add tomatoes and kale. Season with salt and pepper to taste. Serve immediately with rice, noodles, or pasta.
