Ingredients
- 70 g (2 1/2oz) finely chopped onion
- 6-8 fresh tomatoes, peeled and seeds removed
- OR
- 1 x 410g (14 1/2oz) can peeled tomatoes
- 1/2 teaspoon basil
- 1/2 teaspoon fresh mint
- 1/2 teaspoon tarragon
- 1 clove garlic
- Salt and pepper to taste.

Put the chopped onion and fresh (or canned) tomatoes in a non-stick saucepan, add salt and pepper to taste.
Cover and simmer over a low heat for 20 minutes.
Let the sauce cool then add the herbs.
