Ingredients

  • 1 tbsp. olive oil
  • 2 medium cloves garlic, minced
  • 1 large onion, minced
  • 1/2 lb. boneless, skinless chicken breasts, cubed
  • 1/4 cup water
  • 4 tsp. curry powder
  • 1/4 tsp. cayenne pepper
  • 1/2 golden, seedless raisins
  • 1/4 cup apricot preserves
  • 2 tbsp. cornstarch
  • 2 cups plain nonfat yogurt
  • 1/2 tsp. coarse ground black pepper

Step 1

1. Using a large skillet, saute garlic and onions in oil until golden. Add chicken cubes to the skillet and saute until brown.

2. Mix in water, seasonings, preserves and raisins. Leave the skillet uncovered and let simmer between 15-20 minutes or until the chicken has cooked through. Stir occasionally. Most of the liquid should be absorbed.

3. In a small bowl, measure cornstarch. Add nonfat yogurt, making sure to stir until the cornstarch dissolves.

4. Add the mixture to the skillet, stir to incorporate. Let simmer, while stirring continually, or until the sauce thickens. Do not boil.

5. Season with black pepper. Serve.
