Sugar Cookies (Grammy's)

Ingredients

• 1 egg
• 1/3 cup oil
• 1 teaspoon lemon juice
• 1 teaspoon vanilla
• 1/4 cup plus 1 Tablespoon sugar
• 1 cup flour
• 1 teaspoon baking powder
• 1/4 teaspoon salt

Preparation

Step 1

Preheat oven to 400 degrees.

Beat the egg; stir in oil, lemon juice, vanilla and sugar. Stir until combined. Then, sift together the flour, baking powder and salt. Combine the dry ingredients into sugar/egg mixture.

Drop by the teaspoonfuls onto a greased cookie sheet, keeping about 2" apart. Flatten with the bottom of a glass.

Bake at 400 degrees for 8-10 minutes.
