Ingredients
- 16-20 Small round potatoes
- 1 cup Olive oil, divided
- 1 tsp Kosher salt
- 1 tsp Black pepper
- 2 cup Matzoh meal
- 2 tsp Thyme
- 1 tsp Rosemary
- 1 tsp Chives
- 1/2 cup Brown sugar
- 1 tsp Garlic powder
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1 Tbsp Parsley

Preparation
Step 1
1. Preheat the oven to 400.
2. Scrub the potatoes clean.
3. Place the potatoes, ½ a cup olive oil, salt, and pepper inside a plastic bag. Shake to coat potatoes
4. In a blender, combine the matzoh meal, thyme, rosemary, chives, brown sugar, garlic, salt, and pepper. Mix in parsley by hand.
5. Transfer mixture to a shallow bowl. Remove potatoes from bag and coat one by one in mixture.
6. Place in a large baking pan. Drizzle the remaining ½ cup olive oil over the coated potatoes and roast, uncovered 45 for small ones and 1 hour for larger ones.
